Each vintage when we make our Alicante Bouchet Ros� the skins are not used, so to preserve the Barossa tradition of frugality, we save these skins to co-ferment with early picked Grenache and Mataro. The addition of the Alicante skins to the ferment gives tannin, spice and a vibrant colour to the wine. Light bodied and low in alcohol.
