Work in the vineyard: Vines facing south with the particularity of warming up before the others and to have a good maturity. This cuv�e can only know the day on great vintages knowing that we have to find great balances. The cover crop is natural.The vineyards are ploughed ad stripped for better aeration through the ripening season and rest of the year while always maintaining organic and biodynamic practices and our Biodyvin label and Ecocert certification. Vinification: All grapes were hand sorted and passed over the sorting at the reception of the cellar. Fermentation took place in wooden fermenters with very light pumping over just to wet the cap, followed by maceration for 22 to 24 days to develop the the type of wine we are looking for. Malolactic fermentation followed in round 25 hl wooden Stoeckinger tanks ad the wine was then aged for 12 months in 228 litre barrels.
