Average age of the vines: 70 to 100 years.
Ageing potential: 15 to 25 years.
To be consumed preferably from 6/8 years old.
This exceptional cuvée is produced only in great years. This is a double selection: these are the wines from our oldest vines (75 to over 100 years) planted on their best terroirs for which only the best barrels are chosen after a year of ageing.
Depending on the year, the blend is made up of the following grape varieties:
Grenache Noir 70 - 75%
Syrah 15 - 20%
Mourvèdre 10 - 15%
VINIFICATION
The winemaking is identical to that of all the red Châteauneuf-du-Pape produced on the Field (rigorous qualitative sorting, destemming and cold soaking rior to alcoholic co-fermentation in stainless steel with some gentle punchdowns) but the ageing is more complex: after 12 to 15 months of ageing in barrels, one fifth of which is new wood, the best barrels are selected and assembled. This wine is not filtered before bottling.
