In the vineyard:
natural cover crop and organic and biodynamic work - Biodyvin label and Ecocert certification
Manual harvest in small crates. Natural alcoholic fermentation in 12 hl oval Stoeckinger to preserve all the minerality of the subsoil.Fermentation took 4 months followed by 9 months of ageing on the lees.
Vineyard location: Saumur in the areas of les Cerpes and Saint-Vincent
Soils: Clay and limestone and flint silt
Grape variety: 100% Chenin
