Pink Granite soils. 0,8 hectares. 420m elevation. Spontaneous fermentation. 12 days on the skins with daily gravitational pump-overs. no SO2 added. 100% Malolactic fermentation. Matured 11 months in 600L Demi-Muids and stainless steel. No racking, fining or filtration. ABV 13%
