In a vineyard with difficult terrain− 30% steep slopes and a virtual patchwork of parcels Dominique Piron is engaged in sustainable winegrowing. Semi-carbonic ferment, partially destemmed, by a partial Burgundy oak ageing for around 8 months. ABV 12.5%
