Its polished character and undeniable charm make it a standout choice year after year. The vineyard of this wine benefits from a south exposure, with brown limestone soil enriched with clay and loam. Vineyard management involves simple Guyot pruning, manual harvest in crates, sorting table, and destemming, followed by gravity filling. The winemaking process includes a cold maceration for several days, alcoholic fermentation, and an extended maceration period. The aging process takes place in barrels, with a portion of new barrels, for a duration of 12 months. A racking is performed in July, followed by barrel-to-barrel egg white fining. The wine is bottled without filtration.
