St Aubin La Princée

La Princeée” is the first expression of Saint-Aubin by Hubert-Lamy. We find the approach of “Châtaigniers” but in a deeper dimension and smoother in the mouth. We nevertheless remain on an approach of freshness and crunch. Nose of citrus, granny smith, fresh almond and honeysuckle. The vibrant mouth is very slender and ends in apotheosis with a beautiful chalky minerality on the finish. Very long thermo-controlled fermentation of 90 days in barrels of 300 liters and half muids of 600 liters. About 15 months in oak barrels. ABV 13%
