The wine displays a deep ruby-red color. On the nose, it reveals aromas of liquorice, cinnamon, and herbs of the garrigue. The palate offers a dense and savoury experience with firm tannins and concentrated spicy notes. It has a dry and rich texture, and the finish is long, suggesting the presence of additional black fruit flavors. The estate, covering 12 hectares, practices organic and quasi-biodynamic farming, with a vineyard composition of approximately 50% Mourvedre, 25% Grenache, and the remaining Cinsault, Carignan, Rolle, and Clairette. The ancient soils are mainly clay-limestone, with a portion consisting of red clay sandstone and white limestone and sand. The grapes are de-stemmed and undergo traditional vinification using indigenous yeasts. The winemaking process includes judicious punch-downs and pump-overs. After fermentation, the wines are aged in large wooden foudres for a duration of 18 months before they are finally bottled. ABV 14%
